Recent graduate Zoe Williams was backpacking around the world last year when a car crash in Sydney left her with flying back to the UK three months early with a broken back and pelvis.
But rather than mope around during her lengthy recovery, the 25-year-old threw herself into baking.
For six months Zoe experimented with recipes, much to her friends' delight... and now the rest of the UK can also try out one of her creations.
She is the proud winner of a baking competition on ITV's This Morning. The prize is a contract to supply her rhubarb cheesecake to Tesco.
Zoe, from Caerphilly, South Wales, was lucky to survive being crushed in the accident.
She said: “I was knocked unconscious and woke up to find I had broken my back and my pelvis. I was forced to cut my trip short by three months. I was devastated.”
"When I got home all I wanted was to go out dancing with my friends but I had to stay at home."
"And I couldn't go back to work for six months because I needed time to let my body recover."
She made the most of a bad situation though, by turning to baking.
"I went to the library and got armfuls of cookery books... At one point I was making a cake a day and I got all my friends to come round and test them for me."
"Luckily they all do quite physical jobs or I think they would have got quite fat!"
Zoe now has 70 different cheesecakes in her repertoire and has even branched out into making cocktail inspired varieties such as white chocolate mojito; Irish cream; Tia Maria; and strawberry daiquiri.
She said: "The one I made for the competition was inspired by my granddad who grew his own rhubarb and made the most delicious rhubarb crumble."
The cake was discovered when Zoe entered the dessert into a competition run by ITV's This Morning.
Her prize is to have her recipe sold across the UK at Tesco - with all profits going to charity.
